Marmalade Glaze/Sauce

  • 3 cups orange juice
  • water as needed
  • 1 cup marmalade or apricot preserves, divided
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 cup packed light brown sugar
  • 1/4 cup fresh lemon juice or more to taste
  • 1 tablespoon cornstarch blended with 1/3 cup
  • water (optional)

Directions

Pour orange juice and enough water into roasting pan to cover the bottom with at least 1/4-inch of liquid as indicated in the Basic Ham Recipe. Add more water during baking as needed (see Basic ham Recipe).

To make glaze, gently warm 1/2 cup of the marmalade in a small saucepan and stir in ginger, clove and brown sugar to combine. Smear over ham as instructed in the Basic Ham Recipe. To make the sauce, add the remaining marmalade to the pan juices as instructed in the Basic Ham Recipe. Stir in lemon juice and bring to a boil. Add more lemon juice to suit your taste. If desired, add cornstarch mixture as instructed in the Basic Ham Recipe.
