German Cucumber Salad

- 2 large English hothouse cucumbers, unpeeled and thinly sliced
- 1/3 cup rice vinegar or cider vinegar
- 1/4 teaspoon caraway seeds
- 1 T sugar
- 1 teaspoon salt
- 1/2 cup thinly sliced sweet onion, red or yellow
- 2 teaspoons chopped fresh dill or 1 teaspoon dried
- salt and freshly ground black pepper

Directions
1. Place cucumber slices in a large bowl and toss with vinegar, caraway, sugar and salt. Let sit for 1 hour at room temperature.
2. Stir in the sweet onions and dill. Season to taste with salt and pepper and serve.
