German Cucumber Salad

  • 2 large English hothouse cucumbers, unpeeled and thinly sliced
  • 1/3 cup rice vinegar or cider vinegar
  • 1/4 teaspoon caraway seeds
  • 1 T sugar
  • 1 teaspoon salt
  • 1/2 cup thinly sliced sweet onion, red or yellow
  • 2 teaspoons chopped fresh dill or 1 teaspoon dried
  • salt and freshly ground black pepper

Directions

1. Place cucumber slices in a large bowl and toss with vinegar, caraway, sugar and salt. Let sit for 1 hour at room temperature.

2. Stir in the sweet onions and dill. Season to taste with salt and pepper and serve.
