  • 1 Zucchini
  • 1 Squash
  • 1 Carrot
  • Red Onion
  • Juice from one lemon
  • Arugula
  • Roasted Tomatoes
  • Salt and Pepper

Directions

Roast 1 cup cherry tomatoes in oven.

Grate zucchini into thin strips. Grate squash and grate carrots. Add tomatoes, red onion and arugula.

Mix ingredients well with juice from one lemon and top with salt and pepper.
