Watermelon Tomato Mozzarella Salad with Salsa Verde Vinaigrette

  • 4 cups watermelon, chopped into 1 inch cubes
  • 1 cup mozzarella pearls
  • 1 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • 1 1/4 cups salsa verde
  • 1/4 cup olive oil
  • 1 tablespoon cider vinegar
  • 1/4 teaspoon ground black pepper
  • salt and pepper to taste


1. Combine watermelon, mozzerella, cherry tomatoes and cilantro together in bowl.

2. In another bowl, whisk together salsa verde, olive oil, cider vinegar and 1/4 tsp. black pepper.

3. Add vinagrette to salad ingredients, stirring to combine and adding salt and pepper to taste.
