Veal and Lamb Kebab Pita Sandwiches

  • 1 pound ground lamb
  • 1 pound veal, thinly sliced
  • 1 tablespoon parsley, finely chopped
  • 1 tablespoon dill, finely chopped
  • 1 tablespoon oregano, finely chopped
  • 1/4 tablespoon crushed red pepper
  • 1 tablespoon mint, finely chopped
  • 4 pitas, halved and warmed
  • 1/2 cup iceberg lettuce. shredded
  • 1/4 cup pickles, sliced
  • 1/2 cup tomatoes, chopped
  • 1/2 cup green bell peppers, grilled and sliced

Directions

Mix ground lamb, parsley, dill, oregano, crushed red pepper, mint, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until well incorporated. Form 1 inch balls.

On a skewer, alternate veal and ground lamb mixture.

Grill over medium high heat, about 5 minutes on each side, until meat is cooked through. Remove from grill.

In each pita half, fill with meat removed from skewer, lettuce, pickles, tomatoes, peppers.
