Tofu Edamame Garlic Dip

  • 7 garlic cloves, slivered
  • Cooking oil
  • 16 ounces silken tofu, drained
  • 8 ounces edamame beans, shelled
  • 3 tablespoons tahini
  • 1 cup cilantro, loosely chopped
  • 1/2 cup lime juice
  • 2 tablespoons + 2 teaspoons fish sauce
  • Salt


1. In a small saucepan over medium-low heat, cook the garlic slivers in cooking oil until golden brown. Remove garlic from oil onto paper towels.

2. Combine remaining ingredients and garlic, except salt, into a robot coupe or blender and blend until smooth. Season with salt, to taste.

Can be served immediately or refrigerated ahead of time.
