Smashed Black Beans with Roasted Poblano Peppers

  • 2 15.5 ounce cans of whole black beans, undrained
  • 1 cup water
  • 1 large Poblano pepper, roasted, seeded and chopped
  • 1 jalapeno pepper, roasted, seeded and finely chopped
  • 1 cup fresh pico de gallo salsa with liquid
  • Kosher salt to taste

Directions

Heat black beans and water in a saucepan.

Smash the beans with potato masher.

Leaving some of the beans whole.

Mix in the other ingredients.

Reduce heat and simmer for 10 minutes.
