Roasted Lobster

  • 1 live lobster per person
  • 1 large pot of salted water
  • Large ice water bath
  • Corn Oil

Directions

Fill a large pot 3/4 full of water. Add 2 tablespoons of salt for every quart of water. The water should be salty. Bring the water to a rapid boil.

Grasp the lobster by the body and lower it upside down and head first into the boiling water.

Cook for five minutes and plunge in ice water bath to shock and stop the cooking.

Preheat oven to 400 degrees.

Cut the lobster in half length wise and place on a baking sheet, cut side up.

Brush lobster with corn oil and roast for 4-5 minutes.
