Lemon Pepper Chicken Breasts

  • 4 6 ounce boneless, skinless chicken breasts
  • 1/2 cup fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • Zest of one lemon
  • 4 cloves garlic, minced
  • 2 tablespoons lemon pepper
  • 1 tablespoon kosher salt
  • 2 lemons, thickly sliced
  • Arugula or mixed greens


Mix all marinade ingredients and put in a Ziploc bag.

Marinade chicken in the bag for two hours minimum.

Grill chicken or broil in the oven until done. 4-6 minutes per side.

Grill lemons.

Let set for 5 minutes.

Slice chicken in thin slices and serve on a bed of arugula with the grilled lemons.
