  • 6 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons capers, rinsed and minced
  • 2 teaspoons shallots, minced
  • 1 teaspoon garlic, minced
  • 1 teaspoon fresh flat leaf parsley, minced
  • 1/2 teaspoon fresh oregano, chopped
  • 1/4 teaspoon dried Greek oregano, crumbled
  • Sea salt and freshly ground pepper


In a small bowl, whisk together all the ingredients. Taste and add salt and pepper to taste.

Makes about 1/2 cup
