Harvest from the Heart Turkey Salad Sandwich

  • 2 pounds cooked turkey, dark and white meat, bite size pieces
  • 1 cup mayonnaise
  • 1/2 cup whole grain mustard
  • 1/2 cup celery, sliced in diagonal pieces
  • 1/2 cup red onion, chopped in small pieces
  • 1/2 cup flat leaf parsley, coarsely chopped
  • 2 tablespoons lemon juice
  • 2 teaspoons kosher salt
  • 1 teaspoon fresh ground pepper
  • 8 slices Swiss cheese
  • 6" baguette sandwich roll, sliced
  • Cranberry Chutney

Directions

Mix together all the ingredients.

Place between sandwich roll and top with Swiss Cheese.

This sandwich is also great with the bread toasted.

Make it your own by adding some of your favorites,

Avocado, pickles, sliced peppers, lettuce or another type of cheese.
