Grilled Andouille Sausage Orzo Salad

  • 12 oz. Andouille sausages, grilled and sliced into1/2 inch pieces
  • 1 pound orzo, cooked
  • 2 bell peppers, multi-colored
  • 1/2 cup pepperoncinis, sliced
  • Salt and Pepper to taste
  • 3/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 1/2 garlic clove, minced
  • 1/2 teaspoon dried Italian herbs
  • 1 tablespoon tabasco sauce

Directions

1.Grill peppers until charred. Remove and place peppers in a bowl. Cover with plastic wrap and let steam for 20 minutes.

2.Take charred skin off peppers and remove the stem and skin. Slice into inch slices.

3. Combine sausages, orzo, bell pepper slices in a bowl.

4. To make vinagrette, add together olive oil, vinegar, garlic, herbs and tabasco sauce in a bowl and whisk together.

5. Toss salad with vinagrette and add salt and pepper to taste.
