Gremolata with a Tomato Twist

  • Zest of one large lemon careful not to include any of the pith
  • 3-4 cloves of garlic, minced
  • 4 tablespoons parsley, finely chopped
  • 1-2 teaspoons olive oil
  • 1-2 tablespoons tomato juice (fresh if available)
  • 2 teaspoons freshly grated horseradish
  • salt and pepper to taste


Thoroughly combine all ingredients in a small bowl, cover with plastic wrap and refrigerate for an hour. Gremolata is best made fresh. It doesn't keep for more than a day.
