French Baguette Pizza with Roasted Peaches, Prosciutto and Fontina Cheese

  • 1/2 large French baguette sliced open
  • 1 cup fresh ricotta cheese
  • 1/2 cup vodka sauce
  • 2 cups sliced roasted peaches or other stone fruit i.e. cherries,necterines, pluots, grapes
  • 2 ounces thinly sliced prosciutto
  • 1 cup grated fontina cheese

Directions

Preheat oven to 350 degrees

1. Generously spread ricotta cheese on the open face baguette.

2. Gently spread the vodka sauce on ricotta cheese.

3. Arrange the peaches on the baguette.

4. Cover the peaches with the prosciutto.

5. Sprinkle with the fontina cheese.

6. Place the pizzas on a baking sheet.

7. Bake in preheated oven for 15-20 minutes.

Roasted Peaches
2 large peaches (about 1 pound)
1 tablespoon extra virgin olive oil
1 teaspoon fresh thyme leaves or 1/2 teaspoon dried
Kosher salt and freshly ground black pepper

Preheat the oven to 425

1. Cut the peaches into quarters.

2. Toss the peaches with olive oil, thyme, salt and pepper.

3. Place on baking sheet.

4. Roast for 18-20 minutes.
