Breakfast Monte Cristo "Capistrano" Sandwich

  • 2 Texas style toast bread
  • 4 eggs
  • 2 tablespoons milk
  • 1 teaspoon cinnamon
  • Pinch of salt
  • 6 slices bacon, cooked and crispy
  • 1/2 tablespoon butter
  • 2 slices Swiss cheese
  • 2 slices roast turkey breast
  • 2 tablespoons cranberry jelly
  • Pinch cayenne pepper
  • Powdered sugar


In a medium bowl, whisk 2 eggs, milk, cinnamon, and salt.

Cut a 1 1/2 inch circular hole in the middle of each bread. Dip bread into egg mixture.

Place bread in a griddle over medium heat and drop egg in center. Cook for about 4 minutes. Flip over and cook other side for about 4 minutes. Remove from pan and onto foil. Place 1 slice of cheese on each bread and melt in toaster oven for 2 minutes.

In a small mixing bowl, mix cayenne pepper with cranberry jelly.

Assemble the sandwich in this order: egg bread, melted Swiss, cranberry sauce, bacon, turkey, bacon, melted Swiss, egg bread.

Dust with powdered sugar.
