Bistek Saborizado with Tostones and Chiles

  • 2 pounds top round steak, flattened
  • 1 cup green bell peppers, sliced
  • 1/2 cup red onion, sliced
  • 1/4 cup cilantro, chopped
  • 3 teaspoons adobo seasoning
  • 2 large plantains, peeled and cut into 1/2 inch slices
  • 1 teaspoon oregano, finely chopped
  • 1 tablespoon lime juice
  • 2 cups cooking oil
  • Salt and freshly ground pepper

Directions

In a skillet over medium high heat, saute 2 tablespoons oil with green peppers, onion, 2 tablespoons cilantro, and 1 teaspoon adobo seasoning until vegetables are cooked and tender, about 5 minutes. Season with salt and pepper, to taste.

In a skillet over medium high heat, heat 2 tablespoons oil and sear steak with 2 tablespoons cilantro, oregano, lime juice, 2 teaspoons and adobo seasoning, about 3 minutes on each side. Season with salt and pepper, to taste.

Heat remaining cooking oil in a large saucepan to 300 degrees. Fry plantain slices for 2-3 minutes and remove with a slotted spoon. Smash plantains to about 1/8 inch thick and refry in heated oil until slightly crispy, about 5 minutes. Remove with slotted spoon onto paper towels and season with salt while still hot.

Serve hot steak, plantains, peppers together.
