Thai Peanut Ramen Noodles

  • 2 package ramen noodles (you can eliminate the seasoning packet)
  • 1 red bell pepper- sliced
  • 3 Green Onion- chopped
  • 1/4 cup smooth peanut butter
  • 3 tsp Rice Wine vinegar
  • 1/4 cup Soy sauce
  • 2 Tbsp Sesame oil (you can substitute with canola oil)
  • 1/4 cup of honey
  • 1 Tbsp ginger paste
  • 1 tsp chopped garlic
  • 1 tsp hot sauce (optional)
  • Sesame seeds for garnish

Directions

Cook ramen noodles without seasoning until tender. In a large bowl, mix together the peanut butter, vinegar, sesame oil, soy sauce, honey, garlic, ginger, and hot sauce. Add the cooked noodles, red bell pepper, and green onion. Garnish with sesame seeds. Serve hot or cold.
