Leftover Fried Rice

  • Any size portion of leftover meat (chicken, beef, pork, anything)
  • 1 cup rice (uncooked)
  • Any leftover veggies you may have (example: half a bag of leftover veggie mix)
  • 1 egg
  • 1 tablespoon of soy sauce
  • Water

Directions

Combine all ingredients in a pan, coating the rice with olive oil spray. Once everything is well coated, add 2 cups of water to the pan. Bring this to a boil, then turn it on low. Cover with a lid and allow to cook for 15 minutes, or until rice is tender. At the end, stir in 1 egg and cook.
