Chicken Salad with Grapes and Apples

  • 1 teaspoon HEB canola oil
  • 1 pound ground chicken
  • 1/4 cup onion, chopped
  • 1 cup HEB ready fresh go spinach, chopped
  • 1 celery stalk, chopped
  • 2 cups of grapes, sliced in halves
  • 1 medium apple, chopped
  • 1/3 cup low-fat mayonnaise
  • 8 HEB bakeshop 100% whole wheat hamburger buns

Directions

1. Heat a heavy bottom skillet over medium high heat for 3 minutes. Add the oil and ground chicken. Cook 15 minutes or until the internal temperature is 165 degree F. Set aside and let cool.

2. Meanwhile, combine onion, spinach, celery, grapes, apple and mayonnaise in a large serving bowl. Stir in cooked chicken and season to taste with salt and pepper.

3. Serve on a whole wheat bun.
