Bok Choy Stir Fry

  • 1 bunch of chopped bok choy
  • 1 Tbsp. coconut oil
  • 1 tbsp. chopped ginger root
  • 2 garlic cloves, chopped
  • 1-2 Tbsp. Tamari or low sodium soy sauce
  • 1 cup chopped bell pepper in various colors
  • 1 cup sugar snap peas
  • 1 cup mung sprouts
  • black and white sesame seeds
  • 1/4 cup chopped cilantro
  • 1 tsp. red pepper flakes
  • cooked brown rice


Heat skillet or wok with coconut oil and saut� ginger and garlic. Chop bok choy and place in skillet with other veggies and cook for 5-7 minutes. Add tamari and red pepper flakes. Garnish with cilantro and white and black sesame seeds. Serve over brown rice.
